Yesterday we had a picnic with family since my Grandmother is up visiting from North Carolina. (And her birthday was on Thursday.) My Father and Uncle built a small fire and cooked an apple cobbler, biscuits and a ham over the flames. The forecast kept calling for rain all day but we were lucky enough to have a surprisingly warm and sunny day. By the night, sitting around the fire, there were clear, starry skies to our west and cloudy, lightning-flashed skies to our east. It just missed us. It started to drizzle around midnight, signaling to us it was time to wrap up a great day.
As usual in our family, there was way too much food. My contributions were vegan spinach dip (the recipe on the back of the veggie soup mix with Tofutti Sour Supreme as a substitute and no mayo). And the Apple-Pie Crumb Cake Muffins from Vegan with a Vengeance. Expect I made it into Apple-Pie Crumb Cake Cake. This is how I did it last time and was much happier with the outcome, no little muffins to deal with—just one chunk to slice.
I Googled it and came up with a slightly modified version here if you want to give it a try yourself. (The original doesn’t have the nuts.) It’s the perfect fall desert and got the thumbs up yesterday.
